BIT: Chiller/Heatable mixer bowl for a kitchenaid mixer?

Has anyone seen one of these? (Before I get our fabricator to try to make me one...)

Essentially, welding an outer "bowl" around the inner mixer bowl, which could be filled with ice water or hot water, for use in working sauces... (Mainly ice baths, for what I do.)

...perhaps, in an ideal world, some way to put an induction coil under the bottom, for heating, or a circulator for chilling...

Nevermind, found it on kitchenaids website.

Still like the induction idea.

Too expensive - a very cheap induction pad is roughly a hundred bucks. Considering that the mixer is roughly 200 bucks, it would mean a hefty price increase percentage wise.

If you don't need it too hot, a better idea is an inner and outer layer, with a spiral path, with one end you can hook up to the sink faucet, and the other simply a hose you can put in the sink to drain. This way, you can heat to 120-130f. Beyond that, it would probably be something like a steam kettle...

You have any idea what a stirring kettle runs??? (Its turning a... er, I thought $500 mixer, and a $100 induction heater into something which replaces a several thousand dollar machine, which is limited in temperature, and not very responsive to changes.)

I have one of those. Use it for making low carb, gluten free sorbet & ice cream.

It wouldn't last - Kitchenaids, at least the cheap ones, have plastic gears. The really expensive version is the "commercial" which is meant more for duty in restaurant(and costs $650), and even then it's a bit optimistic. So yeah, they could possibly build it for 500-700 bucks. And it would crap out on you in six months due to a being run 10 hours a day. Remember, Kitchenaid was the retail spinoff of Hobart, who does manufacture smaller mixers for heavy commercial use. Of course, you're talking 2200 dollars for a 5 quart N-50 mixer.

Yeah... I suspect that's the "government" price... I saw a $60,000 sticker kettle once, which was offered to me for $18,000...

I didn't know kitchenaids had gone to plastic gearing - they used to be pretty well made.

I wanted the little induction set-up for home use - commercially, I need much larger things - I don't think there is such a thing as a steam-jacketed kettle for home use - at least, not w. enough strength to mix as well...

The Kitchenaide KA mixers are back to metal gears after a stretch when they were plastic.

They went back? I know there was a huge number of complaints about how fast they seemed to break. Musta came to the conclusion it was cheaper to use metal gears than pay the warranty claims.
