Learn how to fold foil into little pockets, and pretty much anything edible becomes campground fare.

From my experience in hunting camp - vegetables.
After a few days of bacon, eggs, beans, and assorted forms of venison, spinach becomes lovely in a unique and cherished way.

One thing that was popular when I was reenacting (after the public went home, so being a little farby was OK) was to cut up a couple hot dogs into a can of pork-and-beans, stick can in fire until hot. Leave the lid partly attached as a handle.

Re: the hobo dinners
We've done those for years. If you'll take a can of cream of mushroom and/or cream of tomato soup and spoon a generous dollop of the soup out of the can onto the fixin's before you close it up, it will make a really good sauce in there. I think the additional liquid helps the cooking go more evenly, too.
I generally don't flip them, but I've always done them on coals. I leave it in until I can hear it talking - sizzling gently and happily.
This is making my mouth water.

Chicken in a can:
1 fryer chicken, rinsed and trimmed of excess fat
seasoning of your choice
2 pieces of heavy duty aluminum foil, about 3 ft long
1 clean #10 can, top removed
13 standard charcoal briquets, and charcoal starter fluid
drill and .25" drill bit
Drill 6-8 holes around the can, about 1" up from the bottom. Place the 13 briquets in the can bottom; all should fit just touching. Spray with starter fluid, wait a few minutes, then light.
While charcoal is starting, lay your foil sheets perpendicularly on top of each other, forming a cross.
Season the chicken. Place the chicken neck down in the middle of the foil cross. Holding it in place by the butt and legs, wrap the top sheet of foil back around the chicken. Repeat with the second sheet. If you do this correctly, the foil sheets will overlap sealing in the chicken, and there will be a twisted tail of foil.
When the charcoal is starting to turn grey, insert the wrapped chicken CAREFULLY into the can(DON'T TEAR THE FOIL!!), until it is about an inch away from the charcoal. Done correctly, the charcoal will "choke down" and burn slowly at reduced heat.
Leave the chicken like this for 2-3 hrs.
When you remove it from the can, open the wrapped chicken in a large pan. It should nearly fall apart, and will be very juicy.
NOTE: This same technique also works well with a 2.5-3.5 lb boneless pork roast, but cook an extra 30 min or so.

Re: Deer Camp Lunch Menu suggestions?
Lunch has never been a big issue in our hunt camp. We get up early in the dark, go hunt morning stand and then wander back to camp. Then it is a huge breakfast with all the extras. Reading, chores, nap time take us to evening stand and we go out again early afternoon to hunt the later hours till dark. Then wander back into camp, and prepare a substantial evening meal. A few beers or a glass of wine, a game of poker and then its tits up for the night. Lunch for us was more of a snack time with salami, cheese and crackers or something similar. This is why it is good to be the cook in camp because the other bastard has to do the dishes..... My buddy got even with me one time and cooked a breakfast with biscuits and sausage gravy, eggs, and a boat load of other stuff and I swear he used every single pot and pan we had in in the camp kitchen. Game on dood - it then became a contest.
One secret to life. Step #1 - Find something you enjoy doing. Step #2 - Find someone foolish enough to pay you to do it.

Lunch is usually sandwiches at our camp. Maybe a little soup if available.

Hungarian potato pasta... goulash... hell 90% of hungarian cuisine consists of boiling "shit" to "fuck" and then serving it with some hearty bread or over pasta.

Re: Deer Camp Lunch Menu suggestions?
Here's what we came up with:
1. Lunch meat & cheese sandwiches, hot green beans, chips.
2. Fried lunch meat & cheese sandwiches, chips, fruit
3. Ramen soup with vegetables & ham cooked in
4. Ditto
5. Precision's sausage & spaghetti sauce sandwiches on hoagie rolls
6. Ditto
7. Spaghetti & meat sauce
We'll mix them up, and we have one extra, so we can skip a ditto if people hate one of them. 'Course if they hate one and say it, they become cook for the rest of the trip, right?
