From Space Nazis to Pastrami manufacture. Man this forum has a hard time staying on.. SQUIRREL!

To add to the discussion, Pastrami is made very similarly to the way bacon is, a salt cure(note that bacon can be both wet AND dry cured) and then smoked - in the case of Pastrami, it's hot smoked rather than the cold smoke employed when turning pork belly into bacon.

Chris, out of curiosity, what kind of salt are you using? Something cheap and easy to lay hands on like Diamond Kosher, or something meant for this sort of application like the socalled "Pink" salt with nitrates in it?

I have a couple of kilos in the larder. Wohoo! I am a meat hobbyist.

Shootists should have no trouble with pickling, since saltpetre is also used to make gunpowder!

We don't threadjack, we segue and free associate. This has to be the only forum where nobody bothers to prefix "OT:" to their thread titles, because how would anybody notice?
