I wouldn't call it "gratuitiously overbuilt" - there are a bunch of guys out there with home built shooting benchs that use butcher block tops and steel tube frames. Personally, I'm of the opinion that a shooting trailer is a better(if more expensive) idea, especially as it can be made really heavy duty(think poured concrete top, steel tube frame, etc. another option is something that doesn't fold up, but is transported via hitch tube, sorta like those cargo carriers.

Another idea I liked, but is financially impractical, is a "schuetzenwagen".
