Honestly the roe are not exciting venison. The red are much better as are the Chinese Water deer and the Mud Jack which are awesome.

Personally, I prefer Roe meat to Red Deer - the texture is finer. I had roe fillets for lunch yesterday - sprinkle with black pepper, brown in a little oil/butter for two minutes each side in a very hot cast-iron pan, then transfer to a cool (80 degree C) oven for ten minutes to relax while you make a shallot and red-wine reduction sauce. Served with potato and leek gratin. Delicious!

Haven't had Chinese Water Deer or Muntjac yet. Perhaps i should go to Perthshire sometime :-)

I've said before, the FR-8 might make a decent scout rifle, if only there was an easy way to mount a scope on it. Besides, bayonet! :P
