May I ask why? I have no experience in dehydrating at all, but I know that there's people that do dry fish here, though they dry it outside rather than in a dehydrator. From what I hear it depends a lot on the specie of fish and time of year, but other than that it's not very difficult to do.

I know that fish can be dried successfully - but I wouldn't call it "jerky", or put it in a book called "just jerky".

The smell is unbearable. Fish must be dried slowly, or it starts to cook/rot simultaneously.

OK, that explains it. All the ways I've heard of drying fish was doing it outside in the sun.

I actually did a few searches for it now, and it seems to be more common than I thought it was here, and that is was used in large scale before freezers were available. I also found out that dried fish is a popular hiking food, and that "fish chips" (small pieces of dried fish) is considered a snack in some areas, as well as given to dogs as a treat.

The best way to sanitarily dry fish is in a salt pack. Namely, slice it thin and pack it in salt. Then "dehydrate" whatever sauce you want on it after.

Marinate in a salty solution in refrigerator, then smoke/dry.

Bacalhau, anyone?

Your Norwegian neighbours still make the best salt cod - my Portuguese friends insist on it for their bacalhau. Stockfish (unsalted dried cod) from the Lofoten Islands is famous too.

Actually, I was only searching for to dried fish of freshwater species. Lutefisk is pretty well known already, and that's either cod or ling.

But it seems a lot of people like dried pike as well, and drying roach used to be common (yes, that's a fish). I read that dried roach is supposedly a good snack.

Yeah, but as we've discussed before, it's what we Squareheads do to re-constitute the dried fish that's a crime against humanity.
