This thread makes we want to go shopping for a Koch fitting from an old seat pan chute harness.

Those would release with your full weight hanging upside down in them (so remember to do let the shoulder fittings go first).

I've got a Boye knife to carry while sailing, w. a blunt tip - but its not my usual carry knife.

I have an old SV-2 survival vest that I can salvage a buckle off for you, if you like. It will release under load, and it's from the harness section, so I think that it'll do what you want it to do. The downside is that you'll have to fold the webbing to attach it to the buckle.
