3 legs in a row, even spacing, thus it's possible to install upside-down...

Even if you have the same values, you also need the same ramp (log, anti-log, linear).

for a linear potentiometer, you wire the middle terminal (wiper) to the input (source) or output (load). Technically, it doesn't matter which pin is input and which is output, you're only changing the CW/CCW adjustment direction. Convention is that Pin1 is your load.

But there's all kinds of ways to wire potentiometers with reactive values between the pins, such that you get a non-linear response curve.

Great... Not my strong suit...

I sorta hoped we could find out the setting from the manufacturer and use a multi-meter across the legs to set it, then solder in place.

It's really starting to sound like this is outside our abilities...

Your local radio shack must have some long time employee old school guys. Most of the ones I've dealt with the last 10 years know how to sell Cell phones and batteries.

In the Ham community, their slogan is "You have questions? We have stupid vacant looks"

That's an idea DD, know any local hams. While not all hams get into component repair, there's almost certainly some in the local community, and most hams will know of, if not know, them. They might be able to assist with trouble shooting and getting parts.
...even before I read MHI, my response to seeing a poster for the stars of the latest Twilight movies was "I see 2 targets and a collaborator".

If that worked, the OEM would have used a fixed resistor. ;)

There's the occasional store with a decent selection of (very)common parts, but like I said, laughable compared to the Radioshack I remember from 25 years ago. Their battery selection has also gone into the toilet - I remember when you could buy any battery size under the sun(N, sub C, F, J, etc), with a fair bit of the more "uncommon common" ones kept in stock.

I do like that quote though.
