Looks lie you have a fun project there , I had a 375 in a model 70 for a while, and I liked it . Shot a bull moose with it , went through the neck and hit a cow moose standing in back of him , fortunately my buddy had a cow tag , did get a serious ration of shit from my friends though.
Iirc the kick was not bad at all and really pretty accurate .

Hornady makes soft 375 bullets for use on elk. Might prevent the through and throughs.

I'm not relishing the prospect of sighting in from a bench. No experience with heavy recoil long guns and would druther be standing and able to roll with more with it. Worst case for me has been 3" magnums in my unpadded 12 ga H&R Topper. That's only half the weight of this rifle so maybe not a big a difference as I anticipate.

If you want to sell a .375 H&H, sell it as a proper "big game" rifle: skip the scope, and put a ghost ring sight on it (look at the factory pop-up ones on a Brno ZKK-602). Much cheaper for you to acquire, and aesthetically much more pleasing to a buyer. I misremember who still sells ghost ring sights these days - I think maybe Williams have ghost-ring inserts for their peep sight line.

Sighting in is a two shot procedure, maybe a total of five if you also want to get a three shot group for the record.
1. Bore sight rifle and scope, to get them at least grossly aligned.
2. Squeeze off one careful shot, with the sights dead on target.
3. Return the rifle to exactly the same firing position, and HOLDING IT STILL, adjust the sights until they now align on the hole you made in step 2.
4. Shoot second (last) shot to confirm POA is now equal to POI.
5. Adjust for elevation, if you wish, and depending on what distance you want to be sighted-in for.
I set my hunting rifles to be about 1.5" high at 100 yards, meaning that I can hold the scope crosshairs dead on the boilerroom of a deer-sized target up to about 250 yards, without worrying about drop and/or hold over. I would very rarely shoot game beyond that distance.

What Dennis said, and I found it to be slightly less than my 338 in terms of recoil , more push and less snap. I always shoot a couple off hand first to relax , really not bad though.

What are you looking to get for it? I might be interested if the price is right, and there's no pitting on the receiver as I'd want it for a 458 lottery project I've been thinking about..

Forget optics if you plan to sell the rifle. Everyone has their own opinion on favorite sight system, especially for the heavies.
Also saves you having to sight it in. Recoil on a .375H&H isn't bad, but it's painful on the wallet.
Hard to tell from the picture. Does the action have a Mauser style extractor?
Does the SN start with a "G" or just a six or seven digit number?

I miss being able to buy boxes of 270grn Winchester Soft points for 20 bucks a box.

Like I said, if it's a "classic"(IE new production CRF) Winchester 70 action, I'm interested, if the price is right, and I don't even want the stock!

It's a CRF new classic. Got the stock barrel channel opened up enough to fit snug last weekend. With the S&H's wedding this weekend I haven't gone any further. Been meaning to get a picture of that progress.
