Preferably near either Houston or College Station, TX. Ideally, one that would include the idea of "at this point, you draw your concealed weapon..."

Check out Paxton Quigley for books.

Her Armed and Female is a classic self defense work.

I usually recommend Lisa Sliwas book "Attitude: Commonsense Defense for Women " if it can be found, it seems to be out of stock in many places. I think it's a very good basic book, it's more about attitude and awareness than it is about practical techniques.

I've heard a lot about Paxton Quigley too, but havent read any of it.

I don't know if there's a Doejang in your area, but a friend of mine reports Han Mu Do as being a practical defensive martial art for her. Krav Maga is also well regarded. Especially since it focuses on situational awareness and doing what's necessary to stay whole, even if "what's necessary" includes hauling ass.

I'd normally suggest Babes With Bullets, however it only focuses on speed and marksmanship.

+1 on Krav Maga. No forms, no mystic stuff, just plain self defense. Also, Krav Maga employs the use of weapons in training.

Our local Krav Maga center offers seminars in home invasion defense, weapons (3 days!), rape prevention, and gun defense. If you look around you might be able to find something similar in your area.

Not specifically for ladies, but relevant nonetheless, is Jeff Cooper's little pamphlet "Principles of Personal Defence".
