In the traditional crop line, I second radishes. Some varieties go from seed to harvest in as little as 21-23 days, and they grow well in sandy soil.

When we were kids, we always grew plenty of carrots, but I don't remember how long it takes them to mature to eating size.

Radishes are one of the quickest maturing crops.
