Such a restaurant might do very well among a certain clientele, many of whom I would call "my kind of people".... But it would also likely be sued... A lot....
I have never eaten your food and never will. But I will assume you are a great cook. That does not a Chef make. I am currently a working Executive Chef and do VERY little cooking. People skills, organizational skills, innovation, imagination and dealing with dicks on both sides of the line are what makes a successful chef.

What you are describing is an asshole who wants to beat people up for not loving his take on food. The restaurant would be best named.

One of the Foodie websites, either Serious Eats or Chowhound, did a page on this, with blind taste testing. The vast majority preferred Medium Rare. Not surprising when you remove the visual clues.

Cooking a steak properly has become alot easier for the nonsteakhouse, now that Immersion circulators have taken the guesswork out of it..

All he would have to do is be featured on a Gordon Ramsey show and being and asshole would actually attract customers. Come to the famous Alimentaire Insultant and be disparaged, cursed at, and otherwise offended by legendary insult master and Chef Chris Byrne.
