Considering how he does things, I expect that was a joke on the order of "That's not coffee, now THIS is coffee."

As for the "poaching pan" -- my mother had a complete set of Lo-Heet stainless steel cookware from the 40's she inherited from my paternal grandmother. If you couldn't do whatever Julia Child did with that set you probably couldn't cook in the first place.
The use of the word "but" usually indicates that everything preceding it in a sentence is a lie.
E.g.:
"I believe in Freedom of Speech, but". . .
"I support the Second Amendment, but". . .

The 12" is $21 shipped from Amazon or around $19 at wallyworld; I didn't check shipping for that sale site.

My pan now has 6 seasoning passes with flaxseed oil and is looking pretty good. Two or three more perhaps and it will be quite smooth. We haven't done the steaks yet (just too busy).
