And it got populare because it was A)very, very good soup, B)reasonably priced for Manhattan C)at the very beginning of the foodie revolution, and D)came along at a lull in Manhattanite trends..
He sold the rights to the "Soup Man" trademark, almost a decade ago(in fact, one opened nearby recently). He's since reopened his restaurant, complete with "the rules".
