Corn syrup is the mischief. We use Hunt's, which seems to have less of it (tastes less sugary, anyway). I really should accept every tomato someone throws my way next year and roll my own. I've never canned, but I have blanched, peeled, and frozen tomaters before.

My mother used to similarly make at least a case, often 2 of the quart mason jars of red sauce made from backyard tomatoes. What else you going to do with 100 lbs of tomatoes?
