There is actually a modding community for Swiss Army knives. Yeah SAK's are modular, in layers, and you can mix and match.

I guess they want to cash in on that.

I didn't know there were SAK modders - any tips about where to look? I'd like to have a "Hunter" style with two main blades, to be able to switch between them without sharpening...

What I remember seeing is the 'Secret Order of the SAK' section of Knifeforums, and the separate offspring forum sosakonline.com which has some fascinating articles and galleries. The sosakonline proprietors have online shops and they do mods to order.
