Ideally, I would like a machine with a very simple display, preferably green text on a black background.
I'd like a simple way to build a "table of contents," and a method of getting that into Word, etc - either via a keyboard emulator, or something else.
Even better would be something portable with an e-ink screen, but I'm pretty sure that doesn't exist.

Check ebay for a Psion 5mx or the Ericsson branded model thereof. Portable, monochrome screen, decent word processor, nice keyboard. I wrote literally tens of thousands of pages on mine before it was stolen and I replaced it with an IBM Thinkpad laptop.
Good luck getting your data off it and onto a PC these days though: they used to come with Win 3.11 and Win 95 transfer software and a serial cable. The Ericsson one could also be hooked into an Ericsson cellphone for mobile internet. Maybe someone has come up with a serial to USB dongle by now...
